- Onion, garlic, jalapeno
- Spinach, frozen
- Tomato, diced
- Eggs
- Avocado
Saute onion, garlic, jalapeno.
Add spinach and saute until warmed and soft.
Add tomatoes and saute 1 or 2 mins longer, until tomatoes start to soften.
Crack eggs over the top. Scramble and cook!
Serve scramble atop a mashed, ripe avocado.
Toast optional.
Steve should post one of his curries, too. I know he doesn't really measure stuff, but even a rough idea of how that magic is accomplished would be awesome!
